BRIX (sugar) using a device called a refractometer; we are able to gage the sugar content of our melons through a process of light refraction. We strive for melons with the highest sugar levels that are shipped to our retailers and, ultimately, to you!

PSI (Crispness/crunch) with a devise referred to as the penetrometer, we are able to gage the internal pressure (Crispness) of our melons and in so doing, ensure that only those with perfectly firm flesh arrive at your door!

COLOR the color of our melons has more importance than you might think, it is an indicator of high anti-oxidant levels from such sources as "lycopene" (watermelon) and "beta-carotene" (cantaloupe)."
